Steve: We moved up here in March of 1995 and in November of 1995 we started making and selling yogurt. After about 1 ? to 2 years we really weren't making a lot of money on milk so we talked to a farmer near Binghamton who advised us to become organic and sell Organic Milk because the price of Organic Milk was higher. We did that and started making organic yogurt and the first year was good because we got a premium. However the second year the premium wasn't much over the commercial price for milk. We sat down and figured out how much time we were spending on which enterprise and how much we were getting paid for the time we were spending and we realized we were getting paid about a dollar an hour for milking cows and about $5.00 per hour for making yogurt. We downsized and sold off 2/3 of our cows and are no longer shipping any milk. We are processing all that milk ourselves and making yogurt, kefir, which is a drinkable yogurt, and cheese and we are also selling raw milk. All our products are being sold locally. The yogurt and kefir are being sold in Ithaca and Trumansburg. The cheese is only sold at the Farmer's Market at this time and raw milk is sold on the farm. People need to come to the farm to find our milk.
